Easy Chili
This recipe features kidney beans, which are a great source of fiber. Chili is an easy, high protein meal that can also be made healthy with the addition of extra vegetables or beans in place of meat.

Ingredients
- 2 pounds ground beef, lean
- 3 medium onions, chopped
- 1 small green pepper, chopped
- 1 tablespoon chili powder
- 3 cups tomato juice
- 1/3 cup ketchup
- 2 15-ounce cans kidney beans, drained and rinsed
Directions
- In a large skillet over medium heat, brown beef, onions and peppers. Drain and discard fat.
- Add chili powder, tomato juice, ketchup and beans.
- Bring to a boil, reduce heat to low and cook an additional 15 minutes.
Recipe Tips
You can use any type of bean in this recipe. Try pinto, black, or cannelini beans.
