Corn Salad
This salad makes the perfect addition to any potluck. It is also customizable - add in your favorite fresh vegetable for a different spin on this simple recipe.

Ingredients
- 1 17-ounce can corn, drained
- 2 ounces cheese, cut into small cubes
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 1/2 cup cucumber, diced
- 1/2 cup carrots, sliced thinly
- 1/4 cup pickle relish
- 1/2 cup Thousand Island or French dressing
Directions
- In a bowl, combine drained corn, cheese, peppers, cucumber, carrots, and relish.
- Mix in salad dressing then cover and chill.
Recipe Tips
For a variation, add any of these: celery, onion, grapes (halved), walnuts, almonds or hard boiled egg.
