Chicken Stir-Fry
Enjoy this Asian-fusion dish with rice for a filling and delicious meal.

Ingredients
- 2 tablespoons vegetable oil
- 1/2 cup carrots, peeled, sliced
- 1/2 cup celery, thinly sliced
- 1/4 cup onion, chopped
- 1 green pepper, cut into strips
- 1 tablespoon garlic, minced
- 1 tablespoon ginger, finely chopped
- 1 pound chicken breast, boneless and skinless, cooked and cut into strips
- 1/2 teaspoon sugar
- 3 tablespoons soy sauce (optional)
- 3 cups rice, brown, cooked
Directions
- Heat a large skillet with vegetable oil over high heat.
- Add vegetables, garlic and ginger to the hot pan. Stir until garlic is slightly brown.
- Add the chicken, sugar and soy sauce to the pan.
- Stir the food for about 1 minute in the pan.
- Serve with cooked rice.
Recipe Tips
Add 2 cups of steamed broccoli, cauliflower, bamboo shoots, baby corn, water chestnuts, bell peppers, onions, or carrots for added fiber, vitamins, and minerals.
