Chicken Diane

Ingredients
- 1 teaspoon olive oil
- 2 pounds chicken breast, boneless, skinless
- 1/2 cup green onion (scallions)s, chopped
- 1/2 cup fresh parsley, chopped
- 1/3 cup chicken broth
- 1 tablespoon apple juice
- 1 1/2 teaspoons cornstarch
- 1 teaspoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 tablespoon butter
- 1 teaspoon salt-free seasoning
Directions
- In a large skillet, heat oil over medium heat.
- Add chicken to skillet, cook until browned, about 8 minutes.
- Turn chicken over and cook until an inserted thermometer reads 165°F for 15 seconds.
- While chicken is cooking, put onions, parsley, broth, apple juice, cornstarch, mustard, and seasoning into a bowl. Mix until smooth.
- Move chicken to a plate. Add butter and the broth mixture to skillet. Cook until slightly thickened, about 2 minutes.
- Remove from heat, stir in lemon juice. Spoon sauce over chicken and serve.
