Chicken and Broccoli Bake

Ingredients
- 1 cup rice, white, uncooked
- 1 10-ounce package broccoli, fresh or frozen, thawed
- 12 ounces chicken breast, boneless and skinless, cooked, cubed
- 2 tablespoons margarine
- 1/4 cup all purpose-flour
- 2 cups chicken broth
- 1/4 cup parmesan cheese, grated (optional)
Directions
- Heat water over medium high heat until boiling. Add the rice, return to boil.
- Reduce heat, cover, and simmer 20-25 minutes, stirring occasionally, until rice is tender.
- Melt butter in large saucepan.
- Add flour to melted margarine and stir. Stir and cook until almost smooth.
- Slowly add broth to margarine/flour. Stir to remove lumps and thicken.
- Add cheese and stir.
- Add rice, broccoli, and chicken. Stir.
- Put in a casserole pan and bake at 350 degrees for 30 minutes or until bubbly.
