Cheesy Potato and Spinach Bake

Ingredients
- 2 cups water
- 1 tablespoon dried onion, minced
- 2 tablespoons butter
- 1 1/2 cups instant potato flakes
- 1/4 cup instant non fat milk powder
- 1/4 cup egg mix
- 1/4 teaspoon black pepper
- 3/4 cup cheese, grated
- 1 10-ounce package frozen spinach, thawed
Directions
- Preheat oven to 425º.
- Combine water, onion and butter in a saucepan and bring to a boil.
- In a bowl, combine potato flakes, dry milk, egg mix and pepper.
- Remove boiling water from heat. Stir in potato mixture until absorbed.
- Add cheese to the mixture and stir.
- Drain the spinach and then spread on the bottom of an oiled 8 x 8 pan. Spread potato mixture on top.
- Bake for 20 minutes until top is light brown.
