Apricot Cobbler
This apricot cobbler would be a wonderful addition to any summer or fall meal.

Ingredients
- 1 15-ounce can apricots, drained and coarsely chopped
- 1 cup flour
- 1/2 cup applesauce, unsweetened
- 1/4 cup shortening (or butter at room temperature)
- 1 medium egg
- 1/2 teaspoon salt
- 2 teaspoons baking powder
Directions
- Preheat oven to 350°F.
- Pour apricots into a 9x13-inch baking dish.
- Mix the flour, applesauce, shortening, egg, salt and baking powder in a bowl until combined.
- Sprinkle the topping over the apricots.
- Bake for 30 minutes.
Recipe Tips
This recipe is great served warm but leftovers will keep in the refrigerator for about four days.
