Zesty Orange Carrots

Ingredients
- 1 pound carrots, peeled cut into 2 inch pieces
- 1/4 teaspoon cinnamon, ground
- 1 orange, juiced and zested (save them separately)
- 1 tablespoon honey
- 1 tablespoon margarine
- 1/2 teaspoon parsley, dried (optional)
Directions
- Bring about 2 cups of water to a gentle boil in saucepan.
- Add carrots and cinnamon. Cook for about 10 minutes, until just tender.
- When carrots are done, drain well.
- Add the orange zest, orange juice, honey, margarine and parsley. Toss to mix, serve while hot.
Recipe Tips
Use lemon or lime in place of orange.
