Zucchini is a yummy, chunky addition to this salsa! Make sure you cut it very small if you plan to use this as a dip.

Directions

  1. Combine zucchini, onion, and tomatoes in a bowl.
  2. Add jalapeno and garlic to the tomato mixture.
  3. Add cilantro, salt, and lime juice to the tomato mixture. Stir well.
  4. Chill in the refrigerator for at least 30 minutes before serving.

Recipe Tips

Add a can of drained and rinsed black beans to the salsa and use it to top potatoes, nachos, or just for dipping!
