Summer Vegetable Salsa
Zucchini is a yummy, chunky addition to this salsa! Make sure you cut it very small if you plan to use this as a dip.

Ingredients
- 1 medium zucchini, chopped
- 1 medium onion, white, diced
- 3 medium tomatoes, diced
- 1 medium jalapeno pepper, seeded and minced (optional)
- 4 cloves garlic, minced
- 1/2 cup cilantro, chopped
- 1/2 teaspoon salt
- 1/4 cup lime juice
Directions
- Combine zucchini, onion, and tomatoes in a bowl.
- Add jalapeno and garlic to the tomato mixture.
- Add cilantro, salt, and lime juice to the tomato mixture. Stir well.
- Chill in the refrigerator for at least 30 minutes before serving.
Recipe Tips
Add a can of drained and rinsed black beans to the salsa and use it to top potatoes, nachos, or just for dipping!
