Delicious Greens

Sautéed greens are a great way to get more greens into your diet without all the volume. They are also a good option for individuals that have digestion issues as cooking the greens helps to break down the plant a bit more before you eat it.

Directions

  1. In a large saucepan, boil 2 quarts (8 cups) of water.
  2. Add mustard greens, return to a boil and cook 3 minutes. Add cabbage and cook 1 more minute. Drain in colander.
  3. Heat a large non-stick skillet over medium high heat. Add oil and sauté garlic and onion until light brown, about 3 minutes.
  4. Add greens and vinegar and cook briefly, about 3 minutes. Serve hot.

Recipe Tips

Use kale or other favorite hearty greens in place of cabbage and mustard greens.
