Ingredients
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 cups chicken broth, low-sodium
- 1 12.5-ounce can chicken, drained
- 2 cups lima beans, cooked
- 1 14.5-ounce can diced tomatoes, drained
- 1 14.5-ounce can corn, drained
Directions
- Heat oil in a large pan over medium high heat. Add onion and cook until tender, about 5 minutes.
- Add chicken broth, tomatoes, lima beans and corn; simmer for 20 minutes over medium heat.
- Reduce heat to low, add chicken, cook for 5 more minutes.
Recipe Tips
Use water or prepared bouillon in place of chicken broth.
