Chicken and Spinach Pasta
This recipe is simple but tasty and has just under 20% of your daily recommended potassium!

Ingredients
- 1 teaspoon olive oil
- 1 pound chicken breast, boneless and skinless cut into 1" pieces
- 1/2 teaspoon black pepper
- 2 cloves garlic
- 3 cups roma tomatoes, diced
- 4 cups baby spinach, washed
- 1/2 cup whole milk
- 1/3 cup grated Parmesan cheese
- 1/2 cup water
- 12 ounces spaghetti, cooked al dente
Directions
- Heat oil in a large skillet over medium-high heat. Season chicken with pepper.
- Add chicken to skillet and cook, flipping once, until cooked, about 4-6 minutes per side. Transfer to cutting board, let rest 5 minutes and slice into strips.
- In empty skillet, add garlic, tomatoes and spinach. Add milk, parmesan, and 1/2 cup water. Bring to a simmer over medium heat and cook 10 minutes until slightly thickened.
- Add cooked pasta to skillet and toss until coated. Add chicken and mix well.
- Serve warm.
Recipe Tips
Use any type of pasta on hand.
Use 1 10-ounce package frozen spinach (thawed and drained) in place of baby spinach.
Use any type of canned tomatoes in place of fresh.
