Pork and Spinach Stir-fry

Ingredients
- 2 cloves garlic, sliced thin
- 3 scallions, chopped
- 1/2 teaspoon cayenne pepper
- 10 ounces pork loin, cut into strips
- 1 teaspoon canola oil
- 2 teaspoons sesame oil
- 2 tablespoons soy sauce
- 2 teaspoons sugar
- 3 medium carrots, diced
- 2 cups brown rice, cooked
- 4 cups spinach, rinsed and chopped
- 1 tablespoon sesame seeds, toasted
Directions
- Combine garlic, scallion, cayenne pepper and pork in a bowl, mixing well.
- Heat canola and sesame oil in a large skillet over medium-high heat.
- Add pork and cook 5-7 minutes, stirring occasionally, until cooked through. Remove pork and set aside.
- Add the soy sauce, sugar, carrots, and brown rice to hot skillet. Cook 3-5 minutes until rice is heated through and carrots soften.
- Add spinach, cover and cook additional 2-3 minutes until spinach just wilted.
- Add pork back into pan, mix well, top with sesame seeds and serve.
Recipe Tips
Use any type of rice.
Use any type of pork: chops/tenderloin/ground. If using a larger cut of meat, cut into strips or bite sized pieces.
