SWAP ScoreWhat's this?
Supporting Wellness at Pantries (SWAP) is a stoplight nutrition ranking system designed to help promote healthy food choices. SWAP ranks food as either green (choose often, supports health), yellow (choose sometimes, can contribute to good health), or red (choose rarely, limited health benefits). These rankings are based on the amount of saturated fat, sodium, and sugar in one serving of the recipe. These nutrients were chosen because they are most associated with chronic disease risk.

Directions

  1. Preheat oven to 350 degrees F. Coat a large baking sheet with non-stick spray.
  2. In a large bowl, combine turkey, quinoa, onion, garlic, zucchini, parsley, red pepper flakes, soy sauce, oregano, black pepper, and egg. Stir to combine well.
  3. Form meatballs from 1 1/2 tablespoons of the meat mixture and roll into a ball. Place on prepared baking sheet, leaving space between them.
  4. Bake meatballs about 20 minutes, until internal temperature reaches 165 degrees F.
  5. While meatballs are cooking, heat tomato sauce in a large saucepan over medium-low heat.
  6. Transfer cooked meatballs to sauce and gently stir to coat them.
  7. Make wraps using 1 piece of lettuce, place two meatballs in it, top with parmesan and enjoy.

Recipe Tips

Use any type of ground meat in place of turkey.

Alternatively, serve over your favorite pasta cooked al dente.

Use any type of rice in place of quinoa.
