What’s in Season: Fall Produce

The transition to fall is marked by cooling temperatures, colorful leaves, and an abundance of squash and root vegetables. Fall produce lends itself well to the warm comfort foods many of us crave on a chilly night. Hearty soups, stews, chilis, and rich pasta dishes can keep all their appeal and gain some nutritional value with the quick addition of some added veggies.

Here are a few easy ways to sneak fall produce into your favorite fall foods.

  • Chicken Noodle Soup – add in extra carrots, potatoes, celery, and onion
  • Chili – add in cubes of squash or potatoes
  • Macaroni and cheese – food process some cauliflower and add it into your cheese sauce
