Yuca with Garlic Sauce
Yuca is a Dominican favorite and can be eaten for breakfast, lunch, or dinner. The garlic sauce elevates this simple boiled yuca dish. Complete this meal with a protein option of your choice and sliced avocado.

Ingredients
- 2 1/2 pounds yuca
- 6 cups water
- 6 tablespoons olive oil
- 1 head garlic, minced
- 6 tablespoons parsley, minced
- 6 tablespoons lime juice
- 1/4 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 pinch oregano, dried
Directions
- Place yuca into a medium-sized pot with water. Simmer over medium-high heat for 10-15 minutes, or until fork tender similarly to potatoes. Drain the water and discard it. Set the boiled yuca aside.
- Make the garlic sauce for yuca while the yuca is boiling by heating the oil in a small pan or saucepan over very low heat. Stir in the garlic. Cover and cook for 5 minutes. Remove from the heat. Mix in parsley, bitter orange juice, salt, black pepper, and oregano. Taste and season with more salt and pepper if you find it necessary.
- Serve the yuca with the sauce on the side.
