Thai Steak and Pear Salad

Ingredients
- 1 pound boneless beef strip steak
- 1 small pear thinly sliced
- 2 each scallions chopped
- 1 small red chile sliced
- 2 each limes
- 1 tablespoon fish sauce
- 2 teaspoons sugar
- 1 teaspoon water
- 5 ounces mixed greens
- 1 cup fresh cilantro
- 3 tablespoons chopped peanuts
Directions
- Trim fat off of boneless beef strip steak. Season steak with 1/2 teaspoon each salt and black pepper.
- Heat cast iron skillet over medium-high heat. Add steak and cook to desired doneness, about 3 to 4 minutes per side, if you prefer medium-rare. Transfer steak to a cutting board and let rest.
- From 2 limes, squeeze 4 tablespoons lime juice into a large bowl. To bowl, add fish sauce (if using), sugar and water. Stir.
- Slice steak into strips.
- Add the pear slices, scallions and chile to the bowl of dressing. Toss to combine. Fold in 5 ounces mixed greens and 1 cup cilantro. Serve with the steak and sprinkle with chopped peanuts, if desired.
