Soft Chicken Taco

Ingredients
- 1 pound boneless chicken breast
- 1/2 teaspoon vegetable oil
- 1 teaspoon garlic, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 teaspoons chili powder (optional)
- 1 green pepper, sliced
- 1 onion, sliced
- 4 6-inch tortillas, flour
- 1/4 head romaine lettuce, thinly sliced
- 1/4 cup tomatoes, diced
- 4 teaspoons salsa
- 1, 11 oz can corn
Directions
- In a large bowl, mix chicken, vegetable oil, garlic, salt, pepper, and taco seasoning or chili powder.
- Cover the bowl with plastic wrap, and place it in the refrigerator for about 30 minutes.
- While the chicken is in the refrigerator, cook the pepper and onion, on stovetop in a large skillet, over medium heat about 12 minutes, until tender.
- Remove the vegetables from skillet and add the chicken. Cook over medium heat, about 10-15 minutes each side.
- Place chicken on a plate. Let it cool for 5 minutes. Cut the chicken into strips.
- Put chicken on the tortillas then add peppers and onion strips. Top with diced tomatoes, corn, lettuce. and salsa.
