Ingredients
- 8 pieces chicken thighs, boneless and skinless
- 1 tablespoon oil to brown the chicken
- 4 whole Roma tomatoes quartered
- 1/2 medium onion roughly chopped
- 2 whole garlic cloves peeled
- 1/2 whole green bell pepper roughly chopped
- 1 cup low sodium chicken stock divided in two
- 2 whole Yukon Gold potatoes unpeeled and cubed
- 2 medium carrots unpeeled and sliced into discs
- salt and pepper to taste
- Spice Mix:
- 1 tablespoon pumpkin seeds
- 1 tablespoon sesame seeds
- 2 whole cloves
- 1 whole bay leaf
- 1 teaspoon oregano
- 1/4 teaspoon whole allspice
- 1/2 teaspoon dried thyme
- 1/4 teaspoon ground cumin
Directions
- Heat oil in a skillet. Season the chicken with salt and pepper and brown it on medium-high heat. Remove from skillet and set aside.
- Saute the tomatoes, garlic, onion, and bell pepper in the same skillet where you browned the chicken. Remove from skillet and add to a blender.
- Lightly brown all spice mix ingredients together over medium heat in the same skillet and spoon them out into the blender. Browning or lightly toasting spices helps to intensify the flavors.
- Add 1/2 cup of chicken stock to the blender and blend the sauce until smooth.
- Add the browned chicken to a pot. Add the blended sauce and 1/2 cup of chicken stock over the chicken.
- Finally, add the carrots and potatoes. Season with salt and pepper and stir to mix all the ingredients. Cover and cook on medium-low heat for about 30 minutes or until the chicken is fully cooked.
- Serve with rice or salad.
