Meatloaf Muffins

Ingredients
- Cooking Spray
- 16 ounces beef, lean, ground
- 1/2 cup oats, dry
- 3/4 cup onion, chopped
- 2 cups broccoli slaw mix
- 1 egg, slightly beaten
- 1 tablespoon Worcestershire sauce
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1 cup tomato sauce (or marinara)
Directions
- Preheat oven to 350 degrees F. Spray a 12-cup muffin tin with cooking spray.
- Combine all other ingredients in a large bowl, except tomato sauce. Mix well.
- Divide mixture evenly between muffin cups. Top with tomato sauce.
- Bake 30-35 minutes, or until cups are firm and register 165 degrees F internal temperature.
- Serve warm.
Recipe Tips
Serve with steamed carrots, broccoli, cauliflower, or spinach.
Use any type of ground meat in place of ground beef.
Serve over red potatoes or brown rice for an interesting mix-up.
