Garden Sloppy Joes
These sloppy joes have a good amount of fiber from the vegetables used and are high in protein.

Ingredients
- 1 medium onion, chopped
- 1 medium carrot, shredded
- 1 medium green pepper, diced
- 1 pound beef, lean, ground
- 1 8-ounce can tomato sauce no salt added
- 1 14.5-ounce can tomatoes, crushed no salt added
- 8 ounces mushrooms, chopped
- 1/4 cup barbecue sauce
- 8 medium hamburger buns, whole wheat
Directions
- Heat a medium nonstick saucepan over medium high heat.
- Add onion, carrots, green pepper, and ground beef. Cook for 5 minutes, stirring occasionally.
- Add tomato sauce, crushed tomatoes, mushrooms and barbecue sauce. Bring to a boil.
- Reduce heat to low and simmer for 15-20 minutes or until thickened, stirring occasionally.
- Spoon sauce over buns and enjoy.
Recipe Tips
Top with cole slaw or shredded cabbage.
Use any type of ground meat in place of ground beef, such as turkey, chicken, or pork.
Use 93% lean or higher for a lean, lower fat option.
