Florida's Favorite Chicken
Grapefruit juice is sweet and sour and pairs well with chicken.

Ingredients
- 12 ounces chicken breasts, boneless and skinless cut into large cubes
- 2 tablespoons chicken broth
- 2 tablespoons onion, chopped
- 1 tablespoon cornstarch
- 1 tablespoon water
- 2 tablespoons walnuts, chopped (optional)
- 1 cup grapefruit juice
Directions
- In a nonstick skillet over medium high heat, brown chicken breasts in broth until each side is lightly browned, about 5 minutes. Remove from pan.
- In same skillet, lightly cook onion until clear, about 5 minutes.
- Mix cornstarch and water in a small cup and add to onion. Break apart any cornstarch chunks with a spoon.
- Mix in chicken and walnuts.
- Slowly add grapefruit juice and stir constantly until mixture starts to thicken. Reduce heat and allow chicken to cook until it is 165 degrees in the center, about 7 minutes.
- Serve immediately.
