Dijon Roasted Chicken and Carrots
Carrots are an excellent source of vitamin A, which is good for your eyes. This high protein meal is tangy and savory from the dijon and herbs.

Ingredients
- 1 tablespoon olive oil
- 1 pound chicken thighs, boneless and skinless
- 2 tablespoons Dijon mustard
- 1/2 tablespoon lemon juice
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 pound carrots, cut into 1" slices
Directions
- Preheat oven to 400 degrees F.
- In a large bowl, combine oil, chicken, mustard, lemon juice, pepper, and thyme. Stir to combine.
- Put chicken onto a sheet pan and place in the oven. Cook for 15 minutes.
- Arrange carrots around chicken. Roast for 20 minutes until chicken is done and carrots are tender.
- Remove from oven and serve.
Recipe Tips
Serve with pasta or rice.
Add 1 medium onion and 1 small bell pepper for added color and vegetables.
Chicken should reach an internal temperature of 165 degrees F.
