Chinese Cold Noodles

				Ingredients
- 12 ounces spaghetti, uncooked
 - 3 1/2 tablespoons low sodium soy sauce
 - 3 1/2 tablespoons seasoned rice vinegar
 - 1 tablespoon chili oil
 - 1 tablespoon sugar
 - 3/4 teaspoon sesame oil
 - 1 clove garlic, minced
 - 1/2 cup noodle cooking water
 - 1 green onion (scallions), chopped
 - 1 small cucumber, thinly sliced
 
Directions
- Cook the noodles according to package instructions until al dente or 1 minute past al dente stage. Pull the noodles out of the pot and into a colander. Rinse the noodles under cold water, and reserve some of the cooking liquid.
 - Meanwhile, in a serving bowl, add the low-sodium soy sauce, rice vinegar, chili oil, sugar, sesame oil, dark soy sauce, salt, and garlic.
 - Add the noodles, noodle cooking water, scallion, and cucumber. Toss everything together and serve. If the noodles look dry, add a bit more of the cooking water.
