Chicken Ratatouille
Ratatouille is a French stewed vegetable dish that originated in Nice. This twist on the traditional recipe adds chicken which provides lean protein to help you feel full for longer.

Ingredients
- 1 tablespoon vegetable oil
- 1.5 pounds chicken breast, skinless and boneless, cut into 1 inch pieces
- 1 medium zucchini, thinly sliced
- 1 eggplant, peeled, cut into 1-inch cubes
- 1 onion, thinly sliced
- 1 green pepper, cut into 1-inch pieces
- 8 ounces mushrooms, sliced
- 1 14.5-ounce can diced tomatoes
- 1 clove garlic, minced
- 1 1/2 teaspoons basil, dried
- 1 tablespoon parsley, chopped
- 1/2 teaspoon black pepper
Directions
- Heat oil in large non-stick skillet over medium high heat. Add chicken and sauté about 3 minutes, or until lightly browned.
- Add zucchini, eggplant, onion, green pepper, and mushrooms. Cook about 15 minutes, stirring occasionally.
- Add tomatoes, garlic, basil, parsley, and pepper; stir and continue cooking about 5 minutes, or until chicken is tender.
