Cheesy Grits
Grits are dried, ground corn usually served as a porridge or side dish. A popular breakfast item, grits are a great grain base for meals and can be sweet or savory.

Ingredients
- 4 cups water
- 1 cube chicken bouillon (optional)
- 1 clove garlic, chopped
- 1/4 cup onion, chopped
- 1 tablespoon margarine
- 1/8 teaspoon black pepper
- 1 cup yellow grits, dry
- 1/2 cup cheddar cheese, low-fat, shredded
Directions
- Bring water, garlic, onion, margarine, black pepper, and bouillon to a boil in a heavy saucepan over medium high heat.
- Slowly whisk in the grits once water is boiling, they will clump if you don't keep whisking!
- Reduce heat to low and cook, covered, 20 minutes, stirring once in a while until grits soften.
- Remove from heat. Top with cheese and serve.

You can get creative with the toppings! Try: a fried egg, fresh or sauteed spinach, protein like cooked chicken or shrimp.
