Cheesy Chicken and Broccoli

  1. Preheat oven to 350 degrees F.
  2. In a large saucepan over medium-high heat, bring water to a boil. Add rice, onion and garlic, reduce heat to low, and cover. Cook about 20 minutes, or until rice is soft.
  3. While the rice is cooking, in a large bowl combine the milk, cream of mushroom soup, and black pepper.
  4. Grease a 9" x 13" baking dish. Put the chicken and broccoli in the dish.
  5. Add the cooked rice to the milk mixture and stir to combine. Pour over the chicken and broccoli.
  6. Bake in preheated oven for 15-18 minutes or until bubbly. Top with shredded cheese and cook another 6 minutes until melted and golden brown.
  7. Serve warm.

Recipe Tips

Add in any other vegetables like 1/2 cup frozen peas right before baking.

This stays in the fridge for up to four days.

Use any type of rice.  If substituting white rice with brown rice, increase the water to 3 cups and cooking time to 30 minutes.
