This spin on mashed potatoes is a popular dish in Ireland. It is customary to make with the first new potatoes harvested.

  1. Scrub the potatoes (do not peel), place them in a pot, and cover them with water.
  2. Heat the water to boiling and cooked the potatoes until they can be pierced with a fork. This should take about 25 minutes.
  3. Finely chop the scallions (use the entire scallion) and put them in a small saucepan.
  4. Cover the scallions with the milk and slowly bring to a boil. Simmer for about 3-4 minutes, stirring constantly with a wooden spoon.
  5. Turn off the heat and let the mixture stand.
  6. Once the potatoes are cooked, strain the water. Peel the potatoes and place back into pot. Mash the hot boiled potatoes.
  7. Add the milk and scallions mixture and beat well.
  8. Beat in the butter and season to taste with salt and pepper.
  9. Serve.

Recipe Tips

Champ is similar to Colcannon. They are both Irish mashed potato dishes, though champ uses scallions and colcannon uses cabbage or kale.
