Cajun Chicken Pasta

Ingredients
- 6 ounces linguini, dry
- 1 tablespoon canola oil
- 1 pound chicken breast, boneless and skinless sliced into strips
- 2 teaspoons Cajun seasoning
- 1 medium red pepper, sliced
- 1 medium green pepper, sliced
- 8 ounces mushrooms, sliced
- 4 scallions, chopped
- 1 cup whole milk
- 1/4 teaspoon dried basil
- 1/4 teaspoon garlic powder
- 1/4 cup Parmesan cheese, grated
Directions
- Prepare pasta al dente according to package instructions. Drain.
- Heat oil in a large skillet over medium heat. Season chicken with Cajun seasoning.
- Add chicken to skillet and cook 5-7 minutes until browned.
- Add peppers, mushrooms, and scallions. Cook additional 2-3 minutes.
- Reduce heat to medium-low and add the milk, basil, and garlic powder. Cook until heated through.
- Add cooked pasta and toss to coat. Heat through.
- Serve warm and top with parmesan cheese.

Use any type of pasta- try whole wheat pasta for more fiber.
