Barbeque Shredded Beef

Ingredients
- 2 pounds beef roast
- 4 cloves garlic, chopped
- 1/2 teaspoon black pepper
- 1 cup barbecue sauce
Directions
- Preheat oven to 425 degrees F.
- Place beef roast in a roasting pan. Rub garlic and pepper on the roast, cover with foil and cook for 30 minutes.
- Turn oven down to 325 degrees F, and roast another 2 to 3 hours or until beef is tender enough to be pulled apart with a fork.
- Remove from oven. Shred beef by pulling it apart with a fork into a bowl.
- Pour barbecue sauce over beef. Stir well.
- Serve as a sandwich, with pasta, or over brown rice.
Recipe Tips
Add 1/2 cup crushed pineapple, drained, to the barbecue sauce.
