Chicken Curry
This beginner-friendly recipe uses staple Indian herbs and spices to create the popular Indian Chicken Curry. This spicy dish pairs well with rice, naan, or chapathi!

Ingredients
- 1 1/2 pounds chicken
- 3 tablespoons oil
- 2 medium red onions, finely chopped
- 2 whole green chilies,
- 3/4 inch fresh ginger
- 3 cloves garlic, minced
- 2 medium tomatoes, finely chopped or pureed
- 1/3 cup low fat yogurt
- 1 teaspoon salt
- 1 cup hot water
- 2 tablespoons coriander leaves chopped
- 1/3 teaspoon turmeric powder
- 1 teaspoon Kashmiri red chili powder
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
Directions
- On a medium flame, heat oil in a deep pan. Stir in the chopped onions and chilies. Saute until deep golden in color, for 7 to 8 mins.
- Add garlic and ginger and saute until you get a nice aroma, for about a minute.
- Then add tomatoes, turmeric, and salt. Mix well and cook until the tomatoes turn soft and mushy.
- Turn the heat down to low. Stir in the yogurt, red chili powder, garam masala, and coriander powder. Cook on low heat, until the mixture smells aromatic.
- Add chicken. Fry on medium heat until the chicken turns white or pale in color, about 3 minutes.
- Cover and cook on low heat for about 3 to 4 minutes.
- Pour hot water (about 1/2 cup) to make a thick gravy. Be sure to use hot water as cold water can toughen up the chicken.
- Cover and cook on a medium flame until the chicken is soft and the curry turns thick.
- Taste the curry and adjust seasonings as needed.
- Serve with naan, rice, or chapathi.
