Black Eyed Peas Salad
This Salada de Feijão Fradinho is a refreshing salad that can be eaten all year long. However, it can be a great dish to eat with your New Year's Eve dinner as many Brazilians believe that lentils attract good luck for the new year!

Ingredients
- 30 ounces black eyed peas, no salt added, rinsed and drained
- 4 green onion (scallions), sliced, white and green separated
- 1 cup yellow bell pepper, chopped
- 1 cup tomatoes, diced
- 1/2 cup cilantro, finely chopped
- 1/2 cup olive oil
- 1/2 cup red wine vinegar or apple cider vinegar
- salt and pepper to taste
Directions
- Place the drained black eyed peas, green onions, yellow bell peppers and tomatoes in a large bowl or container.
- In a separate bowl, make the dressing by mixing in the cilantro, olive oil, the vinegar, salt and pepper. Whisk to combine.
- Pour the dressing over the veggies and toss to combine.
- Cover the container and refrigerate for 2 hours for the flavors to develop.
- Serve!
Recipe Tips
It is preferred to let this salad sit overnight in the fridge for the flavors to develop. Some fun additions to this salad are diced jalapenos, corn, cucumbers, and even cubed ham.
