  1. In a large bowl, mix chicken, vegetable oil, garlic, salt, pepper, and taco seasoning or chili powder.
  2. Cover the bowl with plastic wrap, and place it in the refrigerator for about 30 minutes.
  3. While the chicken is in the refrigerator, cook the pepper and onion, on stovetop in a large skillet, over medium heat about 12 minutes, until tender.
  4. Remove the vegetables from skillet and add the chicken. Cook over medium heat, about 10-15 minutes each side.
  5. Place chicken on a plate. Let it cool for 5 minutes. Cut the chicken into strips.
  6. Put chicken on the tortillas then add peppers and onion strips. Top with diced tomatoes, corn, lettuce. and salsa.
