Crispy Chicken Hash
This high protein recipe is flavorful and can be made spicy with the addition of salsa.

Ingredients
- 1 medium russet potato, scrubbed
- 2 tablespoons butter, unsalted (or vegetable oil)
- 1/2 medium onion, chopped
- 1/4 cup green pepper, diced
- 1/4 cup red pepper, diced
- 1/4 cup celery, diced
- 1 clove garlic, minced
- nonstick cooking spray
- 2 cups chicken breast, boneless and skinless, cooked and cubed
- 2 tablespoons milk, reduced fat
- 4 tablespoons barbecue sauce
Directions
- Shred the potato and set aside. (It will darken in color, but this will not affect hash.)
- Heat 1 tbsp. butter or oil in a medium/large non-stick skillet over medium high heat. Add onion, bell peppers, celery and garlic. Sauté until lightly browned, 5 minutes. Push vegetables to one side of pan. Add remaining butter or oil.
- Add potatoes and mix with oil to coat them. Mix and combine well with the vegetables. Cook 3 minutes. If potatoes stick, scrape pan vigorously and move contents around pan to spray the bottom with cooking spray.
- Mix in chicken, milk, salt and pepper to taste. Spread and flatten out the mixture into a thick cake. Cut it into 4 sections or cut up.
- Divide equally among four plates. Serve with barbecue sauce drizzled on top or around each portion.
Recipe Tips
For a spicy addition, trade the BBQ sauce for salsa.
