Chicken Chow Mein
This tasty dish is protein-packed and an excellent source of vitamins A and C. It will keep you full and satisfied!

Ingredients
- 6 ounces rice noodles, uncooked
- 2 teaspoons canola oil
- 12 ounces chicken thigh, boneless and skinless cut into 1" strips
- 1 medium onion, chopped finely
- 2 cloves garlic, minced
- 1 cup carrot, grated
- 2 teaspoons chicken bouillon granules
- 1 teaspoon hot sauce
- 1 cup broccoli, cut into small pieces
- 1 cup celery, chopped
- 1 cup red bell pepper, chopped
- 4 teaspoons low sodium soy sauce
Directions
- Prepare noodles according to package. Drain and set aside.
- Heat oil in medium skillet over medium-high heat. Add chicken and cook 5-7 minutes, stirring occasionally.
- Add onion and garlic and cook about 1 minute. Add carrot, bouillon, and hot sauce and stir.
- Add broccoli, celery and bell pepper and continue to cook another minute.
- Reduce heat to low, add noodles and soy sauce. Mix well over low heat for 3-5 minutes, or until noodles are heated through.
Recipe Tips
Use any type of hot sauce on hand, or substitute 1/2 teaspoon of cayenne pepper and 1 teaspoon water.
Add any other vegetables, like mushrooms or cabbage for more fiber.
