Cucumber Chicken

Ingredients
- 4 4-ounce chicken breasts, boneless, skinless
- 2 tablespoons vegetable oil
- 1 medium cucumber, washed and chopped
- 1/2 cup low fat plain yogurt
- 2 tablespoons light mayonnaise
- 1/8 teaspoon pepper
- 1 teaspoon dill (optional)
- 1/4 teaspoon salt
Directions
- Preheat broiler.
- Brush both sides of the chicken with oil.
- Broil for 15 minutes or until an inserted thermometer reads 165°F for 15 seconds.
- In a small bowl, combine remaining ingredients.
- Remove chicken from broiler and allow to cool. Cut into bite-sized pieces.
- Combine chicken with sauce and refrigerate for at least two hours.
