Fried Rice

Ingredients
- 1 tablespoon vegetable oil
- 2 large eggs, beaten
- 1 small onion, chopped
- 1/2 cup celery, chopped
- 4 cups cooked rice, cold
- 2 tablespoons soy sauce
Directions
- Heat ½ tablespoon of the oil in a frying pan. Cook the eggs in the pan, breaking them into small pieces with a fork. Place in a clean bowl for later use.
- Cook onions and celery in 1/2 tablespoon of hot oil for 2 minutes.
- Add cooked rice, the scrambled egg pieces and soy sauce. Mix well. Cook over a low flame until rice is heated through.
Recipe Tips
You can also add diced ham, cooked chicken, tofu, or cooked shrimp to this recipe.
