Chicken Rice Salad

Ingredients
- 4 cups lettuce, chopped
- 2 cups brown rice, cooked
- 2 cups chicken breast, boneless and skinless, cooked and cut into strips
- 1 medium tomato, diced
- 1 medium green pepper, diced
- 1 tablespoon olive oil
- 1 medium lemon, juiced
- 2 tablespoons apple cider vinegar
Directions
- Toss all ingredients together in a large bowl.
- Season with herbs of your choice. Try salt-free seasoning, Italian mix, or any combination of spices.
Recipe Tips
This salad is a great way to use leftover chicken and rice. Make it a vegetarian meal, and increase the fiber, by substituting one can of drained and rinsed beans for the chicken.
Try different combinations of seasonal vegetables, like cucumber and radish or carrots and canned artichokes.
