Beef Stroganoff

Ingredients
- 1 pound beef, top round, lean, cut into 1-inch cubes
- 2 teaspoons vegetable oil
- 3/4 tablespoon onion, finely chopped
- 1 pound mushrooms, sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 teaspoon basil, dried
- 1/4 cup white cooking wine (optional)
- 1 cup yogurt, plain, low-fat
- 6 cups macaroni, cooked
Directions
- Heat 1 teaspoon oil in non-stick skillet. Saute onion for 2 minutes.
- Add beef and saute for additional 5 minutes. Turn to brown evenly. Remove from pan and keep hot.
- Add remaining oil to pan; saute mushrooms.
- Add beef and onions to pan with seasonings.
- Add wine (if using) and yogurt; gently stir. Heat, but do not boil. Cook until heated through and thickened.
- Serve with macaroni.
