Ginger Soy Marinated Eggs

Ingredients
- 7 large hardboiled eggs
- 1/2 cup soy sauce, low sodium
- 1/4 teaspoon sesame oil
- 1/4 cup thinly sliced green onions
- 2 teaspoons grated ginger
- 1 1/2 cups water
Directions
- Boil water.
- Add eggs into boiling water and cook for 6 minutes (for a soft boil).
- After 6 minutes, immediately submerge eggs in cold water and let them sit for 10 minutes to cool.
- Combine soy sauce, sesame oil, green onions, ginger, and water in a small bowl and mix.
- Add eggs into mixture and let them marinate for at least 2 hours. The eggs can be marinated for up to 3 days.
- Serve eggs with a bowl of rice or ramen.
