Buttermilk Horseradish Mashed Potatoes

Ingredients
- 2 lbs baking potatoes
- 1/2 cup buttermilk
- 2 tbsp olive oil
- 1 tbsp prepared horseradish
- 2 tbsp chopped parsley
- 1 clove minced garlic
Directions
- Peel the potatoes and chop into equal-sized pieces. Bring water to boil in a large pot.
- Add potatoes to water and cook until potatoes are tender, about 15-20 min.
- Drain, put back in the pan and mash potatoes.
- Stir the buttermilk, garlic, olive oil and horseradish into the potatoes. Season with salt (in moderation) and pepper. Sprinkle with parsley before serving.
