Four Layer Casserole

Ingredients
- 1 pound beef, ground, 85% lean
- 4 russet potatoes, sliced into rounds
- 1 16-ounce package mixed vegetables, frozen (or canned mixed vegetables)
- 1/4 cup cheddar cheese, low-fat shredded
- 1/4 cup milk, low-fat
Directions
- Cook ground beef over medium high heat in frying pan until brown. Drain excess fat.
- Place potatoes in a large baking or casserole dish. Top with vegetables, ground beef, and cheese.
- Pour milk over the casserole.
- Cover with a lid or foil. Bake at 350°F for 1 hour.
