Shepherd's Pie

Ingredients
- 2 potatoes, diced
- 1/3 cup milk
- 1/2 pound turkey, ground, 85% lean
- 2 tablespoons all purpose-flour
- 1 10-ounce package mixed vegetables frozen
- 1 14.5-ounce can vegetable broth, low sodium
- 1/2 cup cheddar cheese, shredded (optional)
Directions
- Place diced potatoes in saucepan. Cover with water and bring to a boil. Reduce heat and simmer, about 15 minutes, until tender.
- Drain potatoes and mash. Stir in milk and set aside.
- Preheat oven to 375°F.
- Brown turkey in a large skillet over medium high heat, about 8 minutes. Stir in flour and cook for 1 minute, stirring constantly.
- Add vegetables and broth. Bring to a slow boil.
- Spoon vegetable/meat mixture into an 8-inch baking dish. Spread potatoes over mixture. Bake 25 minutes.
- Serve hot and top with shredded cheese.
Recipe Tips
Use any type of ground meat in this recipe in place of ground turkey, such as ground beef or pork.
