Microwave Lasagna Rolls

Ingredients
- 1 cup ricotta cheese
- 1 cup low fat mozzarella cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1/2 teaspoon Italian seasoning
- 1 cup mixed vegetables ( such as spinach, carrots and onion)
- 8 ounces lasagna noodles cooked
- 1 15-ounce can low sodium tomato sauce
Directions
- Mix ricotta, mozzarella, Parmesan, and seasoning together.
- Add vegetables to the cheese mixture.
- Spread each noodle with the mixture and roll up tightly.
- Place, seam side down, in a microwavable baking dish.
- Top with tomato sauce, cover, and microwave for 12 minutes or until heated through.
