Chicken and Rice with Spinach and Raisins

Instructions
  1. In medium saucepan, bring water to a boil over medium-high heat.
  2. Add rice, cover and reduce to a simmer over low heat. Simmer for 15-20 minutes.
  3. Removed pan from heat, add spinach and cover. Let stand for 5 minutes without stirring and then fluff with a fork and stir spinach in.
  4. While rice is cooking, heat oil in a large skillet over medium-high heat.
  5. Season chicken with salt and pepper. Then add to skillet and cook until browned on each side, about 2-3 minutes per side.
  6. Transfer chicken to plate and cover to keep warm. Add onion to skillet and cook 5 minutes until soft.
  7. Add broth, lemon juice, olives and raisins to the onion. Cook over medium-high until reduced by half, about 2-3 minutes.
  8. Serve chicken over rice and top with sauce.
Recipe Notes

Substitute any dried fruit for raisins such as dates or dried cranberries.

Substitute chicken cutlets for chicken thighs or breasts.

Use any type of broth on hand- vegetable broth works well in this dish.
