Watermelon Gazpacho

Instructions
  1. In a small bowl, mix 1 cup of cubed watermelon and 1/2 cup of chopped cucumber; set aside. This will be used as a garnish.
  2. Add remaining ingredients to a food processor or blender and process until pureed.
  3. Transfer all ingredients to a large bowl and stir.
  4. Refrigerate until ready to serve. When serving, add about 2 tablespoons of the reserved watermelon and cucumber to each bowl.
