This popular Haitian condiment is traditionally served with rich Haitian dishes as it balances out the flavors and adds a delicious tang.

Ingredients
- 2 cups green cabbage, thinly sliced
- 1 medium onion, thinly sliced
- 1 large carrot, shredded
- 1/2 medium bell pepper, seeded and sliced
- 4 whole Scotch bonnet, seeded and thinly sliced
- 4 garlic cloves, chopped
- 1 1/4 teaspoons salt
- 8 whole black peppercorns (optional)
- 1 1/2 cups vinegar
- juice of half a lime (optional)
Directions
- Combine the cabbage, onion, carrot, bell pepper, chilies, salt, peppercorns in a large bowl and toss well.
- Pack vegetables into a large jar with a tightfitting lid. Pour vinegar and lime juice over the vegetables. Cover with the lid and shake the jar if needed to mix everything up.
- Refrigerate for at least 2 days before opening to allow the contents to pickle.

Be careful handling the spicy Scotch bonnets! Use gloves, wash hands, and avoid touching your eyes.
