Chicken Pasta Salad

Ingredients
Instructions
  1. Cook pasta according to package instructions for al dente. Drain and rinse under cold water.
  2. Place cooled pasta in a large bowl and add spinach, cherry tomatoes, and chicken. Toss to combine.
  3. Sprinkle almonds and cheese over salad.
  4. Combine remaining ingredients except the oil in a small bowl or blender. Stir until combined.
  5. Slowly add oil to bowl while whisking constantly, or add to blender and pulse until combined.
  6. Add half of the dressing to the salad and toss.
  7. Serve cold and add dressing as needed.
Recipe Notes

Use any type of pasta on hand.

Try any type of greens in place of spinach.  Double the greens for more fiber.

Keeps in the refrigerator, undressed, for up to 3 days.
