Chicken and Carrot Rice Pilaf

Instructions
  1. Heat oil in skillet over medium-high heat until hot.
  2. Add chicken and cook until browned on first side, about 3-5 minutes. Flip and brown other side, another 3-5 minutes. Remove from pan.
  3. Over medium heat, add the rice, carrots, onion, mushrooms, and red pepper to the skillet. Stir constantly for 2-3 minutes until rice is browned.
  4. Stir in broth and water, place chicken over rice mixture and bring to a boil.
  5. Reduce heat to low, cover skillet, and simmer for 20-25 minutes or until rice is tender.
  6. Stir in parsley and let stand for 5 minutes. Fluff up the rice with a fork and serve.
Recipe Notes

Use brown or white rice.  If using brown rice, increase water to 3 cups and increase cooking time by 10 minutes.

Add 1/2 teaspoon dried oregano or basil for extra flavor.
