Turnips with Cabbage and White Beans

Ingredients
Instructions
  1. Heat a large skillet over medium-high heat. Add oil.
  2. Add turnip, thyme, onion, and salt. Saute for 2-3 minutes.
  3. Reduce heat to low, cover, and cook until turnips are slightly tender, about 6 minutes. Stir occasionally.
  4. Increase heat to medium-high and add beans. Cook 2 minutes to warm through.
  5. Add cabbage, water, vinegar, and pepper. Cook until cabbage is slightly wilted, stirring occasionally. Top with cheese.

Pair this side with roasted chicken or pork, or make it a vegetarian entree by serving over brown rice.
